Simple Extra Sweet Valentine's Meatloaf

I accidentally made this recipe on Valentine's day while cooking meatloaf for my husband. I wasn't paying attention and accidentally added the sugar meant for the sauce to the meat! Surprisingly, it was really good! So while I scaled back on the amount of sugar, I actually still add it to my meat!


Some like to add lemon to their spaghetti sauce, others crave salted caramel iced cream. For whatever reason, adding a bit of extra sweetness to the meat when preparing meatloaf blends the juices in-between the layers of meat with diced onions is a succulent oddity.

Serves 4 - 6


Grocery List


1lb 80% fat ground beef

1/2lb ground buffalo or 15% ground beef

1 Egg

1 Onion chopped

1 cup of milk

1 cup dried Machowski bread crumbs or Panko is okay

4 heavy tbsp of brown sugar (2 tbsp for sauce, 2 tbsp for meat)

2 tbsp mustard

2 tbsp katsup


Recipe


1. Preheat oven to 350 degrees


2. In a large bowl combine both ground meats, egg, chopped onion, milk, breadcrumbs, and brown sugar. Season with salt and pepper. Mix well with hands or use a kitchen mixer with the flat beater attachment.


3. Grease 5x9 pan and add the meat mix to the pan, patting down lightly to remove excess bubbles between the meat.


4. Mix in a separate bowl, remaining sugar, katsup and mustard to make the meatloaf sauce. Top the meatloaf with the sauce, making sure to keep the mixture sterile by dripping over the meatloaf.


5. Cook for 1 hour at 350 degrees. Top with the remaining sauce and cut into slices to serve!
