Pesto Avocado Toast

I like to add some flair to my avocado toast to enhance the flavor of the avocado. I developed a really delicious pesto avocado mix that can be used with this recipe or sans meat for those who are avoiding meat!



Pesto holds a very warm place in my heart, and well my households as my husband says mine is the best he's ever had lol. This recipe is a perfect breakfast, lunch or even a light dinner!


HINT! Sometimes I like to toast prosciutto, slice and top the avocado toast with the toasted chunks!

I don't know about you, but I've ordered avocado toast numerous times and receive simple avocado spread upon toast with salt and pepper, and there's so many fun options to spice up avocado, why not add some flair when you can?!

I like to give the option of a 1 - 4 servings for this in separate recipes, so add the smaller amount from the grocery list for 1-2 servings or the second to make four servings.


Serves 1 - 4


Grocery List


1. (1 - 2) Large Avocado (or 2 - 4 small)

2. (1/2 - 1 tbsp) Lemon juice

3. (1 - 2) cloves of garlic

4. 1/4 cup Parmesan cheese

5. (1/2 - 1 tbsp) Olive oil

6. 1/4 cup of basil

7. Salt and pepper to taste

8. 1 - 4 slices of wheat bread

9. 1/4 cup sliced or diced almonds


Recipe




1. Juice 1 lemon.


2. Strip and dice garlic or use a garlic press to press.


3. Cut basil into small strips and split pile in half.


4. In a medium bowl add avocado (slice in half avoiding the pit, scoop pit out and discard and scoop avocado into bowl and discard skin) 1/2 of lemon juice, garlic, olive oil, half of basil.


5. Toast bread.


6. Mix all of the ingredients together and salt to pepper to taste. If you'd like to add more lemon use the other 1/2.


7. Coat the toast with the avocado pesto mix, sprinkle the remaining Parmesan cheese and basil and more salt or pepper if you'd like, slice in half and enjoy!
