Thanksgiving Leftover Empanadas

Everyone is always looking for creative ways to use Thanksgiving leftovers. Last year I was on an empanada kick so I invited friends over to bring their Thanksgiving leftovers and we made personalized Thanksgiving empanadas.



These guys are so much fun to make and all that you need to mix up is the dough and use your favorite Thanksgiving leftovers! You can even make a pumpkin pie empanada if your hear desired!


Serves 4 - 6


Grocery List


1. 3 cups all-purpose flour

2. 1/4 to 1/2 teaspoon of salt

3. 6oz unsalted butter (1 stick is 4oz)

4. 1 Egg

5. 1/4 - 1/2 cup of water or milk (adjust to soften and smooth dough)


Recipe


Preheat oven to 375 degrees when you're ready to cook.


1. Mix the flour and salt in a food processor.


2. Add the butter (softened not warm)


3. Add egg and 1/4 cup of water or milk and pulse until a dough forms and add more milk or water as needed to get a soft dough, but make sure not to add too much or the dough will become wet.


4. Roll out the dough into a thin sheet, I usually place a parchment sheet bellow with sprinkled flour and one atop the dough and roll out so that the dough doesn't stick to the rolling pan (You can also flatten balls into circles with a plate or empanada press if you own one.)


5. Cut small circles, I use the floured rim of a cup or bowl, depending on desired size.


6. Place about 1/4 cup of desired leftover Thanksgiving mix and fold empanada dough in half, either using a folk to press the sides or press them and fold over one small corner and continue folding each new piece over the other to form the crusts pictured above. Use a sharp knife to slit the top of the empenada so that steam can release. You can brush with egg to help seal if you need and brush over the top.


7. Place in preheated oven for 18 - 25 minutes, you'll notice the tops will become a golden brown and they should be ready.


Gobble gobble them down and ENJOY! XX
